You can definitely add the new host keys to the server without causing an issue, typically the newer keys will cover older product versions as well. Using the cscript slmgr.vbs /dlv command line from windows\system32 command prompt will show you your servers info, using the /? switch will give you all the options available, as for office activations you would need to grab the OSPP.vbs file from a machine with your newest version of office available, same concept cscript ospp.vbs /? should help you out...
